Amazing Health Benefits of Ghee

If your kitchen has yet to experience having a staple like ghee, also known as liquid gold, you may want to read some of the amazing health benefits of this Indian and Ayurvedic cuisine staple. Not only is it considered suitable for those who are intolerant to dairy, as the casein, whey and lactose are skimmed off in the cooking process but consuming ghee from grass-fed animals brings with it health and immune boosting Vitamins A, D, E and K2. It also contains fatty acid called conjugated linoleic acid (CLA) and butyric acid. CLA is known to help with fat metabolism (and help you lose weight), it is protective against carcinogens, arterial plaque formation and diabetes. The butyric acid nourishes intestinal cells. From a practical use perspective, it has a higher smoke point, stores well at room temperature and doesn't spoil easily. It is also used by athletes as a constant energy source as the medium chain fatty acids are absorbed directly by the liver and burned as energy.

Liquid Gold aka Ghee

Prep: 2 minutes
Cook: 30 minutes
Serving: 3/4 cup
Ingredients:
1, 250 gram unsalted organic or grass fed butter
1 sterilized glass, heat tempered jar (mason jar)
1/2 cup of coconut oil, optional
Preparation:
in a small cooking pan, place butter in whole or cut up into pieces
set heat to medium and allow butter to melt
as the butter cooks, the protein (white foamy stuff) will separate from the fat (liquid gold)
you can leave the foam or carefully skim the off the top with a spoon every so often
as it continues to cook the foam will decrease and you will see bubbles forming on bottom of pan
as the bubbles turn golden-brown, the ghee will be golden and is ready. Turn heat off. Careful not to go beyond this point, as the ghee will burn on bottom and take on a caramelized flavour.
prepare your jar by sterilizing it with hot water (make sure it is a heat resistant jar, mason jars work well)
to ensure no protein bits get into ghee, use a cheesecloth and strainer over the jar while pouring the ghee in
you have the option to add coconut oil, to make ‘coconut ghee’
leave on counter to cool; can be left on counter without refrigeration
ghee will solidify, if still liquid, place in fridge for an hour

Meal Tip/Preparation
can be used in place of butter or oil
